Black Bean Salsa
Looking for a healthy appetizer to take to a gathering of friends. This black bean salsa is a healthy option that everyone will love. It is made with an assortment of heart healthy vegetables with a kick of flavor from the jalapeno, lime and cilantro. It can be served with organic tortilla chips or use as a topping for chicken or grass fed burgers. This recipe makes a large bowlful of goodness so you may need to cut it in half for a smaller group.

Two 15 oz. cans organic black beans, drained and rinsed
One 16 oz. can organic white shoe peg corn, drained
Six TBSP fresh lime juice, approximately 3 limes
Six TBSP olive oil
½ cup red onion, chopped fine
1 ½ tsp. ground cumin
1/4 cup chopped fresh cilantro
½ tsp. sea salt
1 cup peeled and chopped organic roma tomato
1/8 cup jalapeno peppers, chopped, (adjust as needed)
1 avocado cut into small cubes (optional)
Combine all ingredients except tomato, jalapeno peppers and avocado.
Cover refrigerate overnight. Before serving add the tomatoes, jalapeno peppers, and avocado. Stir well. Enjoy!
